I’m not even writing right now. Too busy with my garden and getting ready for my daughter to move. We’ll be painting before they move in. Not to mention moving all her stuff. It wasn’t bad before, but she’s been shopping and a quarter of my dining room is filled with boxes. The truck she’s renting will definitely be full. Once they are moved, I’ll double down on writing. Finish up Reviving Mara. Finish correcting the tense on China Fleet Club which was originally supposed to be out in May, but I started writing Reviving Mara and that shoved it aside.
I should have both covers soon.
Once my daughter is moved into her house, I should be able to get back to writing. My husband works nights so sleeps days and if I’m by myself, I’ll have more time for writing. I just have to make sure I sit down and do it. I’m QUEEN of procrastinators so I know I’ll have a hard time getting back on schedule-if I ever had one!
I have two huge garden plots that will take up a lot of my day. Mainly weeding. My most disliked chore, but one that I caused myself, lol. I love fresh vegetables! I’m truly excited to see my zucchini grow. Mainly because I finally broke out the spiralizer I bought last year and I just tried it and it works excellently! It is an attachment for my Kitchenaid mixer. They turned out awesome with a meaty spaghetti sauce.
Now, I know this isn’t a cooking blog, lol, BUT I have to share the best mug cake recipe I’ve found. I have it almost everyday in one variation or another. I use a large mug, not a regular coffee cup.
1 tbsp of melted butter
1 tbsp on coconut flour
1/2 tsp of baking powder
2 tbsp of sugar substitute (I use splenda because it doesn’t leave a nasty after taste)
a dash of vanilla extract
1 tbsp of cocoa powder
about 6 chocolate chips (I use Lilly’s sugar free)
1 egg
Mix it all together until smooth
Microwave 1 minute
Give it a about 1-2 to cool and pop a couple of chips on top of it along with a dollop of whip cream.
OMG, this is absolutely delicious! If you prefer vanilla, just leave out the cocoa. If you love peanut butter leave out the cocoa and add a tbsp of peanut butter.
Me, I leave in the cocoa and add peanut butter!
